Nap time


Kellen hasn't been the best napper. He takes a couple 20-30 minute naps resulting in a fussy baby most the time unless I lay down with him in my bed. I decided that since he sleeps so well at night in his own room maybe the problem in the day is the sunshine because he has 2 windows in his room. So I decided to make some curtains for his room to block out the light. I was so excited until I got home and held the fabric to the window and it was too short. I was ticked and thought the lady cut it wrong. Then I measured the window and realized that I measured it at 4 foot 7 inches and then told the lady at the store I needed 47 inches. oops. The more annoying thing is that his windows are longer than EVERY other window in the house. Needless to say I had to rethink things and make due, with the end result of curtains that are a tad too short. whatever. When we move again I am sure they will be fine on normal sized windows...or I'll just cut them into a window valance when he doesn't need darkness to sleep anymore. Lesson learned: write down measurements don't just try and remember them!

My Weakness


 Emma and I had a grand time making c.c. cookies yesterday. I found a new recipe via pintrest (http://allrecipes.com/recipe/best-big-fat-chewy-chocolate-chip-cookie/) and decided to give it a go. Let me tell you I am VERY picky about my cookies and usually just make them so I can eat the dough and everyone else can eat the cooked version. I am usually only satisfied by cookies from store bought dough. Yesterday I found a recipe I will actually eat after cooking them!!!! This could be seen as good or bad and today I decided it is the latter because I may have had 5 cookies and about 5 cookies worth of dough in the past 2 days. oops. 

Just a few tips: chill the dough for an hour before cooking....apparently it keeps cookies from going super flat. I used salted butter because that's all I had and it didn't ruin anything, I think. Lastly I used 1/2 cup milk chocolate chips and 3/4 cup semi-sweet. I read somewhere that this is what they do with store bought cookies! 

She wanted to wear an apron like me so I fixed one of mine to fit her : )

We went on a walk and let the dough chill before cooking and she was trying SO hard to be patient while they cooked when we got home.

The recipe says to put 1/4 cup scoops of dough on the pan...the cookies turned out huge. Just the way I like them!

Can't enjoy cookies with out milk and you can't enjoy milk without a straw. duh.


Now I am enjoying a quiet Emma-free weekend thanks to an awesome grandma.

Chicken Caesar Sandwiches








I just got done eating this for dinner and it was SO good & EASY that I had to share.
(Bonus:1 sandwich only has about 375 calories. )

SLOW COOKER CHICKEN CAESAR SANDWICHES
recipe from: The Girl Who Ate Everything


2 pounds boneless skinless chicken thighs or breasts (I used Chicken Breasts)
1/2 to 1 cup of your favorite Caesar dressing
1/2 cup shredded Parmesan cheese
1/4 cup fresh chopped parsley or 2 teaspoons of dried parsley
1/2 teaspoon ground pepper
2 cups shredded romaine lettuce
12 slider buns or 4-6 regular sized hamburger buns
Place chicken in a 3-4 quart slow cooker with 1-2 cups of water, cover and cook on low heat for 4-6 hours.
Remove chicken from cooker using a slotted spoon and drain the water from the slow cooker. Place chicken on a cutting board and pull chicken into shreds, discarding any fat.
Place chicken back in the cooker and pour dressing, Parmesan cheese, parsley, and pepper over the top. Stir until mixed evenly. Cover and cook on high heat for 30 minutes or until mixture is hot.
Spoon 1/4 cup mixture onto each slider bun if you are making sliders or more for regular sized buns. Top with extra shredded Parmesan cheese and lettuce to serve.

***I think that I would prefer it cold...I will be trying that with the leftovers tomorrow for lunch.
***I also think it would be great as a wrap instead of on a bun!

3 months


 Kellen turned 3 months old on Mother's day!

This little man...
-loves to kick his legs non-stop
-moved from his cradle to a crib
-smiles ALL the time
-makes noise whenever he is awake
-enjoys jumping up and down
-sleeps a 9 hour stretch at night
-loves his big sister best
-scoots around on his back
-tries to roll over but can't get the legs to follow quite yet
