-Cooking your chicken in a crock pot makes it WAY easier to shred and shredded chicken goes A LOT farther than cut up. I cooked 5 lbs of chicken with 2 cups of water for 6 hours on low and then freeze or refrigerate for later meals. 2 regular sized chicken breasts shredded is the perfect amount.
-Don't fear the kneading of the bread. No one has ever taught me, I wing it and it ALWAYS turns out fine!
-Roll the dough pretty thin...it rises quite a bit while cooking.
-You always need more BBQ sauce than you think. I do BBQ sauce, chicken, onions, BBQ sauce, cheese.
- This would be REALLY good with pizza sauce, cheese, and your favorite pizza toppings!
-I don't use parchment paper or anything...just roll it out on a lightly floured counter and carefully transfer to a greased cookie sheet.
-I also don't really let them rest. I make one and put it on the sheet then make the next and pop them right into the oven!

I make this recipe and we LOVE it! I use the parchment paper because it makes it easier to transfer to the cookie sheet. And I agree, the more BBQ sauce the better!
